A bread lame scores dough to control expansion of the bread loaf as it bakes and also create a pattern in the baked bread. Mrs. Anderson’s Artisan Bread Lame is made of 18/8 stainless steel and Romanian Beechwood and includes 15 double-edge dough scoring blades. The blade easily scores raised dough without damage or unwanted compression, and the curved design under-cuts for a more defined crust. Simply draw the blade across dough before baking, it will score in both directions, left- and right-handed. The blades are reusable and refillable for thousands of uses.
