Cangshan’s Helena series knives are elegant and minimalist with sleek, smooth lines. The slim semi-bolster balances the knife’s full tang and two stain-resistant rivets solidly fasten the ergonomic handle to the blade for a secure, comfortable grip. Each blade is forged from high-alloy German X50CrMoV15 steel and is heat treated through Cangshan’s proprietary ULTRA6 heat treatment that adds strength and durability and a score of 58+/-2 on the Rockwell Hardness Scale. They are sharpened to a precise 16° angle.
The 8” bread knife features saw-like teeth which slice crusty bread without crushing the soft interior. It is also useful for bagels, pastry items, and tough-skinned fruits and vegetables.The 8” length allows it to slice large squashes and melons.
