Cangshan’s Helena series knives are elegant and minimalist with sleek, smooth lines. The slim semi-bolster balances the knife’s full tang and two stain-resistant rivets solidly fasten the ergonomic handle to the blade for a secure, comfortable grip. Each blade is forged from high-alloy German X50CrMoV15 steel and is heat treated through Cangshan’s proprietary ULTRA6 heat treatment that adds strength and durability and a score of 58+/-2 on the Rockwell Hardness Scale. They are sharpened to a precise 16° angle.
The 6” boning knife has a deeply curved blade tapering to a precise point. Ideal for breaking down meat, the sharply curved tip maneuvers easily around bones and joints. The D-shaped belly of the blade adds versatility to the knife so that it may also be used as a utility slicer to prep fruits and vegetables, as well as carving cooked meat for serving.
